Years ago, while visiting Hunan China with his wife, NYU graduate Simon Sheh had the vision of providing delicious Hunanese Chinese food in America. Although there are a number of fast food restaurants in Union Square, Silky Kitchen manages to stand out as one of the most unique, providing customers a quick and unique taste of authentic Chinese food, which continues to become more popular in the city.

At Silky Kitchen, noddles based dishes, are served with toppings, known as Gai Ma in Hunan China. Ordering at Silky Kitchen, is similar to casual noodle shops in China, with an American fast food twist. So how does fast food at a Chinese food restaurant in Union Square, actually work?

Step One: Choose Carbs

Most Americans are familiar with Chinese dishes that are accompanied by noodles or rice. At Silky Kitchen, customers get to choose between rice, soup noodles, dry mix noodles or fresh rice noodles which are only provided to customers who visit the store. The carbs provide the base of the dish.

Step Two: Gai Ma

In Hunan, toppings are known as Gai Ma. At Silky Kitchen, there are over 16 types of Gai Ma to choose from. The entire menu was carefully crafted by a Hunan chef. Each one of the dishes has its own story and the team has gone through great lengths to perfect each dish. Whether you love veggies, spicy dishes, chick, beef or even some sweet pork, there is a Gai Ma for you.

Step Three: Choose Your Spice Level

There are four spice levels at Silky Kitchen. New customers are encouraged to start at mild or medium. To experience the true Hunan China experience of the dishes, the owner recommends trying SPICY or EXTRA SPICY. This level of spice is the equivalent to the way the dishes are cooked in Hunan.

There are no shortages of fast food places in Union Square. However, Silky Kitchen is becoming increasingly popular, because of the simplicity of the food and the great taste.
